Coffee & Shortbread

This month’s menu is to be a fish based one. It seems as though our guests are keen to sample anything piscatorial and more to the point I thought I would try and introduce them to perhaps some new flavours and combinations!

We will kick the evening off with a welcome drink and some assorted fishy inspired nibbles.

The first course is inspired from the summer spent at our French home in the Perpignan region. It is a dish found on many a restaurant menu and will be a simple light starter of anchovies served with roasted red peppers and toasted bread. It epitomises the region and we hope guests will enjoy this light start to what will be a fish filled dinner.

Next we will serve a creamy risotto that will be laced with sweet prawns and garlic.. just enough to provide an unctuous flavour. Risotto can be a tricky dish to get right and we hope guests will enjoy the flavours of the shellfish and the creamy chalky rice.

For the main course we will be serving white fish fillets, we are planning to use Panga Fillets. This was the fish that was much admired at the Chinese nights back in August and this time we will be using the fish to encase some fresh banana and then the fish will be coated in breadcrumbs and flaked almonds and finally deep-fried.

The fish will then be served on top of a hollandaise sauce with addition of an orange juice reduction and a garnish of steamed green beans and simple boiled new potatoes will then complete the dish!

Finally, the pudding will be a rich and classic Chocolate Marquis that is set in a terrine mould and sliced. We will serve it with a bitter coffee sauce and seasonal fruit garnish. A chilled glass of dessert wine will be given as well.

Finally coffee served with a warm home-made shortbread biscuits will complete the meal.

Suggested donation is £30 per person excluding service. Please bring your own wines.
